Squash-Goat Cheese Quiche

Squash goat cheese quiche
Inspired by an idea from a local bakery, this divine quiche is for serious lovers of goat cheese. Perfect for the cooler months, it utilizes the abundant winter squash readily available October – January. For this quiche I sautéed slivers of of acorn squash with onions and garlic in olive oil and a pinch of Herbes de Provence and salt. Layered with generous chunks of Chevre goat cheese in a shell of pure organic white flour and organic butter, I then topped it off with half a dozen organic free-range eggs blended with hormone-free heavy whipping cream. A sprinkling of fresh chopped sage complements the Fall flavor of squash, and finally, shredded Parmesan gives it a golden skin when baked.
